Sunberry wine making at home is not as difficult as it seems at first glance. Sunberry is a black nightshade. It is identical in size to a cherry, but visually resembles a blueberry. It is grown even in Russian gardens quite simply, as it is characterized by unpretentiousness and minimal susceptibility to climate. The wine made from these berries is not only tasty, but also medicinal.

It is possible to prepare tasty and safe wine from black nightshade only using a certain technology. It will not work to use the one that is familiar to ordinary grapes. Wine yeast, which is often used to produce alcoholic beverages, is not used here.But in this case, the berries cannot be washed - they will retain the natural microflora that is on the skin, which will contribute to the start of the fermentation of the drink.
Sometimes, if fermentation does not occur, you can add some raisins (a handful of about 40-50 grams is enough). If raisins do not help, then bread yeast is added. Of course, they will spoil the taste a little, it will look like a little hops have been added to the wine.
To prepare a home-made alcoholic drink, take a bottle from 10 to 15 liters. The composition should be poured a maximum of a third of the total volume. If you pour more, it is likely that the mixture will overflow during the fermentation process.
The neck of the jar is closed with a special stopper, which can let in carbon dioxide, which is certainly released during the fermentation process. If there is none, then an ordinary rubber glove is used, on which several holes are made. If another wine can stand even for a day in an open position, then for a drink from a sunberry it will be disastrous.Even the smallest ingress of oxygen threatens that a delicious drink will instantly turn into vinegar.
They put fermenting alcohol only in a warm room, because in a cold one it will instantly turn sour, or the process will stop altogether. At the same time, it is undesirable to allow sunlight to enter, but it is not recommended to put it in a completely dark place.

Easy recipe
In order to make wine from black berries by the simplest method, you need a 10-liter bottle. Sunberries are prepared in the usual way: they are simply pressed with a wooden pusher until juice appears. The ingredients are taken as follows:
- 3.5 kilograms of sunberry;
- 3 kilos of granulated sugar;
- 7-8 liters of water.
Transfer the transferred products to the bottom of an enameled container. Add sugar, mix thoroughly until completely dissolved. Then pour water so that it fills a third of the original volume of the container. There is no need to make a starter or wort separately.
The container is covered with a special water seal, or a regular rubber glove is put on. Readiness is checked by the amount of carbon dioxide released. As soon as this has stopped, the wine can be poured into jars and fermented in a dry, cool and dark room.This usually happens only after a month.
Apple variant
And such a wine is usually rich, tasty, rather sweet. Need to take:
- 1 kilogram sunberry;
- 2 kilograms of apples (necessarily sweet, with a little sourness);
- 3 kilos of granulated sugar;
- water.
First, the berries are prepared in the usual way - they are crushed until the juice appears. Apples are crushed in a different way to a state of puree - in a meat grinder, grind, rub on a grater, grind in a blender. Products are mixed and thrown into a bucket or large pot. Leave for four days until signs of active fermentation appear. Then sugar is added. Everyone falls asleep in a bottle, adds water and leaves to ferment.
This alcohol will be ready only in 2 months.
Expiration date and storage conditions
Store in a dark and cool room. Term - up to two years (if not higher than 18 degrees).
