How to choose the right fruits

In the first recipe that we bring to your attention, an ordinary rubber glove is used as a water seal.
The drink will require 10 kg of ripe apples of the sweetest and juiciest varieties.
A simple cooking process consists of the following steps:
- Apples wipe with a dry soft cloth to remove dust and dirt.
- Cut off the places where there are defects, and also remove the core with grains.
- Cut into slices and mince.
- Put the resulting apple mass into a glass or ceramic container.
- Cover with gauze and keep in a cool dark place for three days.

- 3 kg of white sugar.

- Cut in a convenient way and process in a juicer.

- Put the bottle in a dark, warm place.
- About a month later, when bubbles begin to form on the surface of the fruit liquid, and the pieces of pears fall apart when shaken, squeeze out the pulp.
- Add another third of the sugar and stir until dissolved.
- Put the container with the wort back on the water seal. Keep in this state until the liquid becomes clear and a characteristic precipitate forms.
- Drain the clear apple pear liquid into a separate container and add all the remaining sugar.
- Stir until the sugar is completely dissolved and pour the finished homemade drink into sterile glass bottles.
- Clog carefully and put away in a dark place with an air temperature in the range of + 12-18 ° С.
- Wine bottles should ripen and be stored in a horizontal position or at an angle of 30-45 degrees.
From green apples
Wine made from unripe apples will be an excellent aperitif. This recipe requires the following ingredients:
- 20 kg unripe apples;
- 200 g of granulated sugar for every 1 liter of apple juice (it is advisable to use brown sugar, with a yellowish or brownish tinge).
The process of making wine from sour green apples includes the following steps:
- Wash apples, peel and remove all damaged areas.
- Make applesauce using a blender or meat grinder.

- Install a water seal on the neck of a glass bottle.
- Keep for about two months at temperatures up to +22 °C.
- Carefully to avoid sediment, drain the clear fruit liquid into a separate glass container, and then use a funnel to bottle the wine.
- Seal hermetically with stoppers and put in a dark place. The wine aging period lasts up to four months.
Without juicing and adding yeast
For this easy-to-implement option you will need:
- 15 kg apples of any variety;
- 500g raisins or fresh grapes;
- 3 kg of sugar;
- 10 liters of filtered drinking water.
The process is:
- Grate the apples, cut into slices and remove the cores.
- Grate and put into a convenient container of a suitable size.
- Pour in all the sugar and infuse in a dark place for six days, previously covered with gauze or a lid.
- Put the apple mass into a bottle and add raisins to it.
- Pour in water.
- Put a water seal on the neck of the bottle and hide it for a month in a warm place.
- After the specified period, pour the apple liquid without sediment into a separate glass container.
- Prepare some bottles and sterilize them.
- Pour the wine into bottles with a funnel and cork them.
Dry wine recipe
For dry apple wine, good quality sour fruits must be used, they must be plucked from the tree and not have the slightest sign of rot or other damage.
The set of ingredients is minimal:
- 15 apples;
- 1.5 kg of sugar.

- 10 large ripe apple fruits;
- 1.5 liters of quality vodka.

- 800 g sugar;
- 2 tsp dry wine yeast.
