Features of making wine from grape leaves

In the autumn they harvest, and, of course, they collect a lot of fruits and vegetables. Cut off dry shoots for the winter and simply throw them away or burn them. Few gardeners harvest grapevine and make delicious wine out of it - they just don't know it's possible.In fact, from the remains of a plant that has already outlived its usefulness, you can make a fragrant alcoholic drink of pink, white color, and if you try, even sparkling champagne.

In order to make wine, you will need to take a special dry container (of course, it is thoroughly washed beforehand).

You can take a three-liter bottle - this is the standard option.

The raw material is the vine and leaves harvested in autumn. They do not need to be washed, but it is worth dousing with boiling water. The vine harvested in autumn is dried up, the wine from it will turn out fragrant, but it will not ferment much. But if you make it from a vine harvested in the spring, you will notice that the drink will be made quickly, it will quickly act on people.

The main additions to wine are yeast, raisins or ammonia. They act as catalysts for natural processes.

How to make wine from grape leaves at home

Wine can be made from grape leaves and vines by those who have their own vineyards. But you can also buy these ingredients from summer residents, but in this case you can’t be sure when they were collected, whether the plant was treated with chemicals.

Yeast-free white wine recipe

You will need to take:

  • 10 liters of spring water;
  • 2 kilos of grape vines and leaves;
  • 1 kilogram of granulated sugar;
  • a cup of light raisins.

First you need to boil all the water in a separate container. Dip the main ingredients previously scalded in boiling water there. Boiling water should cover the entire surface of the plants, leaving no dry patches. Remove from heat and put in a thick, warm towel in the kitchen for three days.

After three days, open the container. The wort should acquire a brownish tint, be sour in taste. If this happens, then the wort is filtered, the vine and leaves are thrown away, the drink is poured into a clean jar. If this does not happen, then wait another day.

Now you need to add granulated sugar. It is taken 1 kilogram per 10 liters of composition. But, alas, it is impossible to accurately indicate the volume, since each vine is individual. The sugar level in finished form should not be less than 21 percent - check with a hydrometer.

Add raisins and ammonia to the drink. They put the jar in a warm place, while it is necessary that light falls on it. Strong fermentation will be noticeable in a day. Constantly check the level of sugar - it should not become less. If this happens, then add more granulated sugar.

You can understand that the wine is cooked by the subsidence of the foam and the change in color to a darker one. Usually you need to wait at least a week.

Wine is bottled. Clog tightly. Gases sometimes descend. Ready to drink when completely clear (but a cloudy must remains at the bottom).

Pink drink

Taken:

  • 10 liters of water;
  • 2 kg vines and leaves;
  • 2 kg raspberries;
  • 1 kg of sugar;
  • 150g raisins;
  • 3 g ammonia.

Vine and leaves are thrown into boiling water, the resulting composition is wrapped, left for three days. Pour raspberries with sugar, add water and leave for a day. Mix the ingredients (previously remove all unsuitable for drinking), add the remaining ingredients. Leave to wander in a warm and bright place. The sugar level should not fall below 21 degrees.

Sparkling wine

For making champagne take:

  • 12 liters of water;
  • 2 kg vines and leaves;
  • 2.5 kg crushed grapes;
  • 4 tablespoons yeast.

The plant is evaporated with boiling water, wrapped and left for 3 days. Pour into a fermentation jar, put on a glove with punctures. Leave in a warm place. After 6 days, strain, add grapes, yeast and sugar. Leave to ferment in a warm place for a month. After checking the sugar level (at least 21 degrees), pour into jars. Composition will be ready in 4 months.
