There are no difficulties in making wine from tangerines, the main thing is to choose the right ingredients, follow the instructions. A drink created by fermentation with further clarification will cost a lot, but it turns out tasty and invigorating, worth a try.
The subtleties of making tangerine wine
Tangerine drink is extremely susceptible to microbes, it is absolutely impossible to allow their penetration into the product. Therefore:
- dishes before cooking should be thoroughly washed, poured with boiling water and dried;
- wash your hands, or better yet, put on sterile rubber gloves.
Ingredient selection rules
To create wine, ripe tangerines are taken, sweet or sweet and sour. On the surface of the fruit there should be no dents, traces of decay. Do not use overripe, bitter tangerines.
The pits are taken out of citrus slices. Cut off the peel, zest and white film that covers the slices.
How to make tangerine wine at home
Wine from tangerines is prepared by fermentation with further clarification.
Because tangerines are high in acid and there are no natural yeasts on the surface, you have to use yeast or homemade sourdough.

- 10 kg tangerines;
- 250 g of sugar per 1 liter of citrus juice;
- 35 ml of water for 1 liter of juice.
Step by step wine making:
- Juice is squeezed out of tangerine pulp. Should be 6 liters. The cake is left.
- Piece cake, yeast in the amount indicated in the instructions on the package are placed in a wide bowl. Pour in 200 ml of water and tangerine juice. Pour in 850 g of sugar.
- The composition is stirred. The neck of the dishes is covered with gauze. The blank is placed for fermentation in a shaded place for 3 days.
- The resulting wort is filtered through multilayer gauze. The cake is thrown away.
- Add 300 g of sugar. The liquid is stirred until the sugar grains dissolve.
- Wort fill the bottle 2/3. Put in a shaded place where the temperature does not exceed 18-20 ° C. A water seal is attached to the neck.
- After 3 days, a portion of the drink (500 ml) is separated, 240 g of sugar is dissolved in it. Pour into the main volume, stir. Again cling water seal.
- After 4 weeks, the rest of the sugar (200 g) is added in the same way.
- A bottle with a water seal is kept in a shaded place for 40-50 days.
- It turns out a transparent drink with a citrus aroma and a pleasant sour taste. It is put in the basement to ripen for 6 months.
With raisin starter
Instead of yeast, you can use homemade raisin starter. Moreover, it is universal, suitable for making wine not only from tangerines, but also from any other ingredients.
For cooking take:
- 150g dark unwashed raisins;
- 50g sugar;
- 300 ml warm boiled water.
They make wine starter like this:
- Ingredients put together in a bottle.
- They plug the bottle with cotton.
- Leave for 3 days at a temperature of +25 °C.
- Strain. Used as directed.

If you plan to make a dessert alcoholic drink, then the starter is added in the amount of 3% of the volume of the must, if dry or semi-sweet, then in the amount of 2%. Store the starter in the refrigerator for 10 days.
Orange variant
Instead of tangerines for making wine, you can take other citrus fruits - oranges. The technology for creating an orange drink is similar to making a tangerine drink.
From canned tangerines, orange juice and chocolate
The recipe, created by a family from Tennessee, quickly gained popularity around the world. The nuance of obtaining high-quality wine is a long exposure, lasting up to 2 years. A drink made from tangerines and chocolate turns out to be sweet, fragrant, with a strength of about 12-14 degrees.
To make wine from tangerines take:
- 3.5L fresh orange juice;
- 2.5 kg sweet and sour tangerines;
- 1 kg of sugar;
- 120g cocoa powder;
- 5g yeast nutrition;
- 6g grape tannin;
- 2g potassium pyrosulfite;
- pack of wine yeast.
Prepare the drink as follows:
- Tangerine pulp is crushed to a mushy state.
- Sugar, yeast nutrition, tannin, potassium pyrosulfite are placed in the fermenter, orange juice is poured. Stir thoroughly.
- 200 ml is poured from the resulting solution. Pour into a blender. Turn on the device at minimum power, while rotating, slowly pour in cocoa.
- The finished mixture is poured into the fermenter. Add tangerine pulp. Stir thoroughly.
- After 12 hours, add yeast in the amount indicated in the instructions.
- Attach a water seal. Leave the liquid to ferment for 8-10 days. Shake once a day.
- The fermented drink is filtered twice. Pour into a fermentation tank, cling to a water seal.
- Leave in a cool room for 6 months to age. During this time, filtration is carried out periodically to remove the resulting precipitate.
- Mature wine is poured into glass bottles. Hermetically closed. Put in a cool place, keep for another year or at least 6 months.
Storage conditions
Store tangerine wine in glass, hermetically sealed bottles in the basement or refrigerator. Shelf life - up to 3 years.
