- Turn the heat up to high for a quick boil.
- Remove the foam, turn off the fire after a minute.
- Let the mixture cool.
- Put the jam back on the stove, add the citric acid and the cinnamon stick. Boil, reduce the fire to a minimum. Heat for another 30 minutes, but do not boil.
With lemon
