  2. While the beets are cooking, you need to peel the carrots, wash them and grate them on a medium grater.
  3. Next, you need to properly rinse the leeks, cut into small rings, and finely chop the washed parsley with a knife.
  4. Carrots are fried in a pan in olive oil until soft, after which onions and parsley are added. The vegetable mixture should continue to cook over low heat.
  5. Bulgarian pepper and chili pepper should be poured with boiling water for 5 minutes. Then the bell pepper should be cut into rings, and the chili - in half. After that, vegetables are added to the pan to the main mass.
  6. The washed tomatoes are cut into slices about a millimeter thick, after which they are sent to the pan.
  7. All vegetables must be stewed until the tomatoes are boiled. This takes approximately ten minutes.
  8. At this time, softened beets should be grated and sent to the rest of the food to prepare.
  9. Now you can add sugar and s alt, mix and simmer for another five minutes.
  10. It remains to spread the lecho into sterilized jars, close the containers properly and, when they cool down, send them to a cool place for storage.

To prepare beetroot lecho dressing for borscht you will need:

  • 3 kilos of beets;
  • 1 kilogram of tomatoes;
  • 500 grams of bell pepper;
  • 500 grams of onion;
  • 150 grams of garlic;
  • 1.5 cups vegetable oil;
  • 100 milliliters of vinegar (9%);
  • 4 tablespoons of sugar;
  • 2 tablespoons of s alt;
  • half a red hot pepper.

The recipe is very similar to the previous one, except that the beets do not need to be softened, as they will be boiled in the soup. Cooking progress:

  1. The onion should be diced and fried until golden brown.
