The subtleties of making wine from raspberries and currants

To make the wine even tastier and stand for a long time, you need to take into account the secrets shared by experienced winemakers:

  • add not only black and red currants, but also white - the taste and aroma will only benefit;
  • change the ratio of sugar and water depending on the situation - it comes with experience, so it's better to make the first wine under the supervision of a more experienced winemaker;
  • raspberries in recipes can be replaced with another berry or fruit - the algorithm will remain the same;
  • often stops fermentation - need to add sourdough (wine yeast, raisins, raspberry sourdough).

The cooking process is generally not difficult. But you need to take into account the fact that the wine turns out to be different in type, if the proportions are observed. So, for table, 3.4 liters of raspberry juice, 1.4 liters of currants, 4.4 liters of water and 1.6 kilograms of sugar. To make a dessert, respectively, you will need 4.8 liters, 2 liters, 1.4 liters and 3 kg.

Ingredient Requirements

It is important to choose the right ingredients for a drink. Any variety of raspberries and currants can be, the main thing is that it is saturated, fresh, not overripe and ripe.

Bright red raspberries will not only make the wine more fragrant and rich, but also give the desired color.

If you want to make an extreme color, you can look for a special black berry, but it is extremely rare even in large cities. Such a wine will become ruby and literally amaze everyone. You can also take yellow berries, in which case the composition will turn out to be golden pink.

Currants are chosen ripe, but in no case the one that literally bursts. Wine is made from both black and red berries, you can even mix them together if you wish. The taste varies, but not everyone can catch the subtle notes.

How to make raspberry and currant wine at home

Red currant recipe

This wine is rich garnet, light ruby color. A treasure trove of vitamin C and natural antioxidants can be made from:

  • 3 kilograms of raspberries;
  • 200 ml currant juice;
  • 400 ml of water per liter of juice;
  • 500 grams of sugar first and 75 grams per liter at the end.

Raspberries are carefully prepared, making sure that there are no midges and bugs left. But they are not washed, they are simply passed through a juicer or processed with a pusher. The pulp is poured with water, left to ferment for 24 hours in a warm place in the kitchen. After that, squeeze in a convenient way (gauze, press). Add 400 ml of water per 1 liter to raspberries. Leave for four days in the same room.

After that, pour in 100 milliliters of currant juice, add half a kilogram of sugar, mix until it is completely dissolved.

This composition can already be set to roam. Pour into a large bottle, cover with a shutter, or use an ordinary rubber glove bought at a pharmacy. A water lock is either bought at a liquor store, or made from an ordinary straw. Lower the hose into a glass of water.

Fermentation takes up to two months - this juice is individual. The end will become clear from the state of the shutter or glove. After it, the wine must be filtered to get rid of the cloudy and tasteless sediment.

Sugar is added at the rate of 75 grams per liter (but more is possible if the wine turned out to be very sour due to the characteristics of the ingredients). Pour into jars, put in a cold room to finally approach. The wine will be ready in 2 months.

Blackcurrant variant

The variant with a dark shade of currant turns out to be saturated red. This is not the kind of table wine that you can “play” with before lunch or dinner. Currant drink is independent, its taste does not need to be combined with others. Need to take:

  • 2 kilos of raspberries;
  • 2 kilos of blackcurrants;
  • 4 kilos of sugar;
  • 2-3 liters of water.

First you need to prepare the raspberries. To do this, unwashed berries are poured into a sterilized container, a kilo of sugar is added and left in a warm place for five days. Then add carefully prepared and washed currants, add the rest of the kilo of granulated sugar, add water.

Pour the contents into a large bottle, install a water seal. Leave in a warm room for 2 weeks. After that, add 2 kilos of sugar, leave to ferment further.

When the glove falls off, then filter, leave in the refrigerator for another 2 months.

Storage rules

Wine is stored in a dry and cool room for up to a year. If placed in the sun, it may lose its bright color.
