For the first time, blackberry wine was made in Serbia. True, the exact date of manufacture cannot be established. In Serbia, such alcoholic drinks were made exclusively for home consumption.

According to one of the legends, on his deathbed, one winemaker said to his son "I taught you everything I knew, but in the end I will say one more thing - wine can be made from grapes." From this legend, it is not difficult to assume that wine in Serbia was made from almost all berries and fruits.

The subtleties of making a drink

For the preparation of any of the recipes, any variety is suitable. It is best to use very ripe or overripe fruits. You can use both wild blackberries and homemade varieties. The skin contains a large amount of wild yeast, thanks to which fermentation is actively taking place. Berries make delicious sweet and strong wines.

Easiest recipe

What is required from the products:

  • 2.5 kg blackberries;
  • 1 liter of boiled water;
  • 1.5 kg of granulated sugar;
  • 65g raisins.

How to cook:

  1. Crush the berries with your hands or a crush. They are not allowed to be washed.
  2. Put the mass into a glass container with a narrow neck, add raisins and add 500 g of sugar.
  3. Stir thoroughly, cover with a lid and put the container in a warm place.
  4. The room temperature should be between +22 and +25 degrees. Once a day, the mass is stirred.

When active fermentation begins, the juice is drained and the pulp is squeezed out. Add 400 g of sugar and mix thoroughly. Install a water seal on the bottle, put it in a warm place. After 3 days, add another 400 g of sugar, after stirring it in a small amount of juice.

After 40-50 days, the liquid will stop fermenting, the sediment will fall to the bottom, and the drink itself will be lighter. If the wine is not very sweet, you can add more sugar. To make it fortified, pour in alcohol or vodka. After that, leave it for another 12 days.

Caramel Blackberry Variant

What is required from the products:

  • 7 kg blackberries;
  • 2 kg of granulated sugar;
  • 1.5 liters of boiled water.

How to cook:

  1. Squeeze the berries. Heat the water to 35 degrees.
  2. Mix juice and water. Leave for 3 hours.
  3. After this, repeat the spinning process again.
  4. Make caramel from sugar. Mix caramel syrup with blackberry juice.
  5. Leave for 2 days to start the fermentation process. If fermentation has not begun, a handful of unwashed berries or wine yeast are added to the drink.

Further, the cooking technology follows the same pattern as the preparation of any other recipe.

According to the "correct" technology

What you need from the products:

  • 5kg blackberries;
  • 1.3 kg of granulated sugar;
  • 2 liters of boiled water.

How to cook:

  1. Crush the berries, mix with 600 g of sugar. Put the mass in a dark room for 2 days.
  2. Juice diluted with water. Then transfer the puree to a large bottle for 2/3 of the total volume.
  3. Close it with a water seal. Remove container for 2-3 weeks.
  4. After you need to squeeze the pulp, mix the juice with sugar and pour it into a bottle.
  5. After 4 days, drain through a hose to separate the sediment.
  6. After 1-2 months, the liquid should become lighter. You can add sugar again to make it sweeter.

Serbian Blackberry Wine Recipe "Drunken Blackberry"

What you need from the products:

  • 3 kg berries;
  • 1.5 kg of granulated sugar;
  • 1.7L water;
  • raisins.

How to cook:

  1. Berries do not need to be washed. Turn it into a puree, add raisins and 1/3 of the sugar.
  2. Stir, cover the container with gauze and put away for 3 days in a warm room.
  3. Then squeeze the pulp from the juice, add 600 g of sugar.
  4. Pour the juice into the bottle, filling it 2/3 full. Cover with water seal.
  5. After 2 days, pour the rest of the sugar. Leave for 30 days.
  6. When the drink stops fermenting and brightens, it is drained through a hose to separate it from the precipitate.

Without water

To make the taste more intense, do not add water during cooking. For this recipe, you only need berries and granulated sugar. Mash the berries, leave for 3 days. After you need to squeeze the juice, add the sweetener and put a water seal. After 10 days, add another 1 kg of granulated sugar. When fermentation stops, you can add more sweetener to taste and leave the bottle for several days in a dark place.

With honey

What you need from the products:

  • 2 kg honey;
  • 1 kg of granulated sugar;
  • 3 kg blackberries;
  • 3.5 liters of water.

How to cook:

  1. Do not wash the berries, immediately mash them into a puree. Pour a little water into the puree, cover with gauze and put away for 3 days. By this time, fermentation should begin.
  2. After that, separate the juice from the pulp, boil the syrup from honey and sugar (1 l), add it to the juice.
  3. Pour immediately into a large bottle, cover with a water seal and put in a warm place for 40-45 days.
  4. When this period has passed, drain the drink through a hose to separate it from the sediment.
  5. Cover the container again with a water seal and remove for 7 days. After that, drain the wine from the sediment again.

With raspberries

Making blackberry-raspberry wine is easy. You can make a drink according to the traditional recipe for blackberry wine, only you will need to immediately mix the fruits and crush them into a homogeneous mass. After that, do it according to standard technology.

With raisins

Raisins are often used in cooking to promote fermentation. Raisins fall asleep immediately in blackberry puree. Then the wine is prepared according to the standard recipe.

With cognac

In order to make blackberry wine with cognac, you need to prepare a drink according to a traditional recipe. When it is almost ready (when the sediment falls to the bottom and fermentation stops), you will need to add cognac and mix. After that, leave for another 2 weeks.

Storage rules

Shelf life is 2 years. Bottles are recommended to be stored in a cool place away from sunlight. Due to high temperatures, it may disappear.
