In autumn I like to make preparations from vegetables. It takes a lot of time to cook. In winter, I begin a happy time to rest from country cares. You will get cooked zucchini with beans for the winter from the shelf and a delicious side dish for meat, sausages, grilled sausages, ready. Cooking zucchini caviar with beans
I try to make zucchini caviar quickly. I plan all the stages so that the cooking time is kept to a minimum. I start cooking caviar with beans. In the evening, I sort out the beans (1 glass) from the garbage, wash them, fill them with water and leave them overnight.
In the morning I drain the water from the beans, pour fresh water and put it on the stove. I add a little s alt to the water. Cook the beans until half cooked over low heat for 30 minutes. In the meantime, I'm doing zucchini. By autumn, I have a huge number of them. Choose any.
I take those that will not be stored for a long time - with tails torn off inaccurately. Before peeling the peel, I wash it and only then peel it. I cut the zucchini into pieces to make it easier to remove the seeds from the zucchini. I rinse the pieces of zucchini without seeds and peel and cut into cubes. Pure zucchini yields 3 kg.
Taking on carrots and onions. You need 2 of both. I take not a trifle, but vegetables of a good, large size. I clean, wash, cut onions into cubes, rub carrots on a regular grater. I put 2 pans on the stove. On the smaller one, I fry carrots and onions, on the larger one, zucchini. Grease both pans well with vegetable oil.
I shift zucchini and fried vegetables into a large saucepan, add:
- 100 g tomato paste;
- 20 g each of s alt, sugar.
Vegetables 30 minutes carcass, add ready-made beans, 2 crushed garlic cloves, 30 ml vinegar, oil (vegetable) 50 ml, stir, carcass 10 minutes, closing the lid. At this time, I prepare jars (mine, sterilize). I lay out the finished workpiece in clean jars, close it with lids, and send it for storage. Usually banks are closed for several days with a blanket. I do it too, but not always.
Beans in tomato sauce
Even as a child I loved beans in tomato sauce. Her mother bought it from the store. I found a recipe for a delicious dish on the Internet and tried to repeat it. The experiment went well. The work was appreciated by all friends. I am happy to share the recipe.
I put 1 kg of white beans to boil. I take out an electric meat grinder. I will chop tomatoes on it. They are needed to make tomato sauce. You need exactly 3 kg. I peel the skin of the tomato. I dip the tomatoes in a colander in boiling water for a few seconds, the skin flies off by itself, you just need to help it a little.
I put a large pot on the stove. I pour the preparation for the sauce into it and sprinkle spices:
- Black pepper;
- Red pepper;
- Sugar 1 tbsp. l;
- S alt 1 tbsp. l;
- Laurel leaf 4 pieces.
Pepper should be laid down according to your taste. For lovers of spicy, you can pour a teaspoon. Boil the sauce for 30 minutes. I send the finished white beans to a saucepan with sauce, stew for 10 minutes. While the workpiece comes, my half-liter jars, sterilize them, lay out the beans in the sauce.I roll up the banks and put them in storage in the cellar. If you don't have a cellar, close the jars and put them on the bottom shelf of the refrigerator.
Delicious zucchini salad with beans
I hope everyone enjoys a hearty and delicious recipe for zucchini with beans for the winter. Cooking is easy and enjoyable. Tomato juice - 1 liter I take ready-made, store-bought. For this volume of juice, I clean 3 kg of zucchini from seeds and skins.
Cutting zucchini into cubes. I try to make them the same size. I don't cut too thin so they don't fall apart when cooked. Beans 2 tbsp. I cook in advance, first soak for 8-12 hours, then boil until almost cooked.
In addition to beans and zucchini, you need 500 g of sweet pepper. For beauty, peppers can be taken in different colors: yellow, green, red. I clean the peppers from seeds and partitions, cut into cubes.
I put all the vegetables in a large pot. I add spices (s alt, pepper) to taste, sugar 200 g, vegetable oil 1 tbsp. and all tomato juice. I boil vegetables for 60 minutes. At the very end, I pour in a tablespoon of vinegar.
I take sterile jars and lids. Hot I pour the winter snack into jars and roll them up hermetically with lids. I wrap the jars with a warm blanket so that they stay hot longer. Two days later I send jars of zucchini for the winter to the cellar for storage.
Amazing zucchini salad with vegetables
From zucchini you can make an amazing salad for the winter. You will need other vegetables for harvesting:
- White beans.
- Tomatoes.
- Sweet pepper.
- Apples.
Beans 500 g soak for 6-12 hours, boil, put in a colander. Let's take tomatoes. Let's take 1.5 kg. We will prepare the sauce from them. The skin should be removed. To make our work easier, scald the tomatoes with boiling water.
Chop the tomatoes with a blender. Sending the tomato to the blender bowl, cut them into 4 parts. Take 4-5 apples for the sauce. After removing the seeds, you should get 500 g.
Chop apples and tomatoes until puree. Pour the apple-tomato sauce into a saucepan, send 200 ml of vegetable oil, 100 g of s alt, 150 g of sugar there. While the sauce is boiling, peel and cut the sweet pepper into squares. It is needed in its pure form 0.7 kg.
It remains to prepare the zucchini. Without skins and seeds, you should get 3 kg. We cut the pulp into cubes. Pour all the vegetables into the saucepan. On minimum heat, boil the vegetable mass for 40 minutes.
At the end of cooking, 15 minutes before the end, add 100 g of chopped garlic, 3-4 minutes before the end of cooking, pour in vinegar 3-4 tbsp. l. We pour the resulting yummy into jars and wait for winter.
