After 10 minutes, leaves are added to the pot with jam, after which it is cooked for another 3 minutes.

Ready-made royal jam should turn out with transparent berries. It is poured into jars, and lemon slices and cherry leaves are stacked on top.

Gooseberry jam with walnuts and cardamom

For cooking you will need:

  1. Green unripe gooseberries.
  2. Walnuts - 30-50g
  3. Sugar - 1.5 kg for sour berries, 1 kg for sweet ones.
  4. Water - half a liter.
  5. Ground cardamom.

Nuts are split, peeled, broken into small pieces. The berries are washed, on both sides they are freed from tails, it is important not to violate their integrity.The pulp is removed manually, for this, hairpins, paper clips, pins are used. Hollow berries are recommended to be washed under running water using a colander. This is necessary so that the seeds remaining inside do not get into the jam.

The insides of the berries are put into a saucepan and poured with 3 glasses of water, after which they are put on a small fire and boiled for half an hour.

While the pulp decoction is being prepared, gooseberries are stuffed tightly with walnuts so that they do not fall out during cooking. If the berry is large enough, you can put a quarter of the nut kernel into it.

After 30 minutes, the broth is filtered and half of 1 liter is left, this is the amount needed to make jam according to the recipe. Sugar is added to the broth in a saucepan, which is brought to a boil. The syrup is first boiled over high heat with frequent stirring, then 2-3 minutes - over low heat.

Stuffed berries are poured with cooled syrup and left overnight. In the morning, jam with added cardamom is brought to a boil and boiled for five minutes over low heat. To make the jam thick, boil it for 5 minutes 3-4 times in 5-6 hours.

Jam expiration date

Subject to the rules of preparation and preservation for the winter, the product retains its qualities for 3 years. During this period, the amount of trace elements and vitamins in the jam decreases every year, and the taste changes slightly.
