It is being replaced by the time of delicious preparations, and cucumbers canned with mountain ash for the winter will be a great addition to both the daily and festive tables. Vegetables prepared with berries acquire a pleasant non-standard taste that even demanding gourmets will appreciate.
Required Ingredients
Canning requires simple ingredients. These are cucumbers, mountain ash, garlic, allspice, sugar, s alt and vinegar.
Preparation of vegetables and berries
Cucumbers should be kept in water for at least 4 hours before canning. Berries should be washed thoroughly. This is all that needs to be prepared from products for further processing.
Recipes and step-by-step instructions for preparing snacks
As you know, mountain ash is red and chokeberry. Therefore, the recipes for preparing canned cucumbers with these berries are somewhat different.
Classic version of cucumbers with bunches of mountain ash
According to the traditional method, vinegar is not needed to make canned rowan cucumbers, since rowan contains a sufficient amount of acid. Follow these steps:
- Take 1 kg of vegetables and 2-3 sprigs of berries into a 2-liter jar.
- For the marinade, prepare 0.7 l of water, ¾ cup of sugar, 20 g of s alt and 5 peas of allspice.
- Cucumbers placed in sterile jars should be poured with boiling water twice, and on the third - pour marinade and close with seaming lids.
If desired, you can add bay leaf, horseradish leaves, cherries, grapes, currants.
With red rowan
For the blank you will need:
- 2 kg tomatoes and 5 clusters of berries per 3 liter jar;
- 1.3L water, 1 cup sugar, 1 tbsp. l. s alt for marinade.
Vegetables should be thoroughly washed, cut off the ends and put in a container, alternating with berries.
Next, you need to dissolve s alt and sugar in water, boil the mixture. Filling is done with brine three times. After that, the jars can be rolled up and left to cool upside down, wrapped in a warm cloth.
With chokeberry
To close cucumbers with chokeberry for the winter, follow this recipe:
- put berries in jars (without branches);
- add a few garlic cloves and allspice;
- put cucumbers;
- fill the container with boiling water, cover and hold for about 15 minutes;
- brew an infusion of sweetener, water and table s alt, add vinegar and canned water to the mixture;
- boil the brine and then pour into jars.
At the final stage, cork the jars and leave them to cool, wrapping them in a blanket.
Cucumbers prepared according to this recipe are suitable for making side dishes, appetizers, salads, all kinds of canapes.
Because canning takes place without sterilization, the vegetables remain crunchy.
Pickles with mountain ash
To prepare pickles with mountain ash, only the red variety of berries is used.About 1.5 kg of vegetables are taken per 2-liter jar, which are pre-soaked in water for 8 hours, changing the water once. Cucumbers are laid out in a jar and poured with marinade prepared from 1 liter of water, 1 tbsp. spoons of s alt and 3 tbsp. spoons of sugar. ¼ cup of apple cider vinegar 4% is also added here.
Canned cucumbers with berries
Instead of mountain ash, cucumbers can be closed with other berries, such as currants, cranberries, cherry plums. However, in all these cases, vinegar should be added using the classic recipe, as in the case of chokeberry. The only exception is the preservation of cucumbers with cranberries, since this berry, like red rowan, gives enough of its natural acid.
Recipe without vinegar
Natural acid can perfectly preserve vegetables, allowing them to be stored like regular preparations with vinegar. When canning a three-liter jar, take half a kilogram of berries.The rest of the recipe is exactly the same as the usual canning method. Instead of mountain ash, you can use sorrel, sour apples or lingonberries.
Serving Rules
Canned foods can be served at the table in different forms. You can add sunflower (olive) oil, herbs, spices to them. Sometimes such blanks are used by the hostesses as ingredients for preparing various dishes (for example, Olivier salad).
How long blanks are stored
Rolled cans can be stored for a long time. But it is advisable to eat them in the winter of the same year when they were closed. They will not go bad next winter, but they may lose their taste.
