Classic Cucumber Delight Recipe

Classic recipe includes:

  • 2.5 kg cucumbers;
  • 3 l thick tomato juice;
  • garlic head;
  • 1 tbsp l. s alt;
  • 0.5 tbsp l. sugar;
  • 1 tbsp l. vinegar essence 70%;
  • 150 ml vegetable oil;
  • spices.

How to cook:

  1. Vegetables are peeled, pitted and cut into small pieces.
  2. Pour them into tomato juice, add bay leaves, cloves, peppercorns, oil, s alt and sugar.
  3. Boil for 20 minutes. Sprinkle minced garlic. Optionally, you can add any chopped greens.
  4. Cook another 5 minutes, pour in the vinegar and turn off the fire.

Hot vegetables are poured into jars and rolled up.

With hot chili sauce

In this case, the classic recipe takes 0.5 liters less tomato juice, and add hot chili sauce. Such a cucumber preparation will be more burning.

You can make a cucumber salad with store-bought sauces.

Required:

  • 1 kg vegetables;
  • 120 ml tomato sauce;
  • 170g onion;
  • 110g sugar;
  • 1 tbsp l. s alt;
  • 100 ml vinegar;
  • 1 liter of water.

Cooking steps:

  1. Onions are cut into quarter rings, cucumbers are half circles.
  2. Sterilized jars are filled with vegetables, poured with brine. To prepare it, ketchup, vinegar, water are poured into the pan, s alt and sugar are added. If desired, you can add a little hot sauce.
  3. Put on fire, bring to a boil and pour over the cucumber mass.
  4. Sterilize 20 minutes.

Ketchup from overgrown cucumbers

It should only be stored in the cellar, in hermetically sealed jars. It is recommended to eat within 2-3 months.

Required:

  • cucumber - 10 pcs;
  • onions - 5 heads;
  • mustard seeds - 50g;
  • ground black pepper - 20 g;
  • s alt - 160 g;
  • apple vinegar - 800 ml.

Chop the onion and cucumber finely, put in a sieve for 10 hours to stack the juice. After adding the rest of the ingredients, mix, put in jars.

Rules and duration of storage

Cucumber ketchup, closed for the winter with metal lids, is stored in the cellar or pantry for no more than a year.
