- 10 grams of wine yeast - can be bought in specialized stores;
- 4 kilos of white sugar.
First prepare the syrup: sugar is mixed with water, heated, boiled until thickened. Hawthorn berries are laid out on the bottom of the container, poured with hot syrup. Yeast is prepared, diluted with water, as stated in the instructions for use. Wait a few minutes and add them to the bulk.
The jar is closed with a water seal and left alone for three days. Next, the wort is drained, half the sugar is added. Wait a week again, repeat the procedure. The drink will be ready in 1.5 months.
Variant without yeast

- 200 grams of hawthorn;
- 5 plant flowers;
- 1 liter red wine;
- 70 grams of natural flower honey.

- 10 liters of water;
- 200g raisins.
Mix raisins, sugar and water, leave in a warm place for 4 days. The fact that the starter is ready can be understood by rapid fermentation and the formation of thick foam.
Sugar is dissolved in water, hawthorn is poured into the composition. Leaven is added, removed for three days. Then 1 liter of wort is mixed with an identical volume of sugar, returned, left for three days. The procedure is repeated two more times.
With chokeberry
Take;
- 2.5 kg hawthorn;
- 3 kg of sugar;
- 1 kg rowan;
- 100g raisins;
- 6 liters of water.
In general, the recipe is identical to the previous one. The mountain ash must be mashed to obtain aroma.
With lemons and oranges
For 1 kg of the main ingredient you need:
- 0.6 kg of oranges;
- 2 kg of sugar;
- 0.4 kg of lemons;
- raisins.
Sourdough is done as standard. Lemons and oranges are added during the second stage of preparation (when hawthorn is mixed with sourdough and allowed to ferment).
Expiration date and storage rules
