The specifics of making sugar-free gooseberry jam

Preparing sugar-free gooseberry jam is not as difficult as it might seem at first glance. For some categories of people, sugar is contraindicated to use, so you have to look for alternative options. Gooseberry dessert for diabetics can be cooked on fructose. In this case, fructose is simply used instead of sugar.

Jam can be prepared without sugar at all, but it will taste very sour, gooseberries, even ripe ones, are a little sour. To make the jam not so sour, it is better to use the sweetest varieties of gooseberries and fully ripe berries.

Purchasing the necessary ingredients

To make jam without sugar, you need very few ingredients. It's gooseberries, a small amount of water and fructose or any other sweetener.

The berries are sorted out before cooking, the leaves and the rest of the garbage are thrown out. Then they are thoroughly washed under running water, thrown into a colander and allowed to drain. After that, you can already start cooking.

Preparation of containers

Before you start cooking the recipe, you need to prepare a container for jam. For cooking, it is better to use an enameled rather than an aluminum pan. If aluminum is used, then immediately after cooking, the workpiece is transferred to the banks.

Banks are pre-washed with soap and water. Before transferring jam into them, the jars are sterilized.

Cooking steps

There are several cooking recipes. For example, you can cook gooseberry puree.

What you need:

  • 2 kg gooseberries;
  • 300ml filtered water.

How to cook:

  1. Pour berries with water, simmer for about 15 minutes.
  2. Then cool a little and rub the mass through a sieve to make a puree.
  3. Put it back into the pot and cook for another 6 minutes.
  4. When the puree is ready, it is laid hot in jars and sterilized for about 10-14 minutes.
  5. Then cover with lids and roll up.

Preparing fructose preserves:

  1. This recipe will require 1 kg of berries, 1 glass of water, citric acid and 100 g of fructose.
  2. Rinse the fruits thoroughly under running water, sort them out, remove the stalks and dried inflorescences.
  3. Pour berries with water, put on fire and cook for 10 minutes.
  4. Then add fructose and citric acid.
  5. Cook another 25 minutes (you can simmer longer, you want the dessert to be more uniform in consistency).

Spread hot jam into jars.

How to make canned food without sweeteners:

  1. If no sweeteners are added, the dessert will taste sour.
  2. For cooking you will need a berry, a few kiwis.
  3. Peel the kiwifruit, transfer to a blender with the fruits, grind until smooth.
  4. Put the mass into sterilized jars, roll up the lids.

In this recipe, you can add an orange, which is pre-peeled and crushed separately in a blender, then both masses are combined, mixed thoroughly and laid out in sterilized jars.

Further storage

Store the finished workpiece in the basement or cellar, where the temperature is low and the sun's rays will not fall on the jar. You can also clean the preservation in the refrigerator or on the balcony. Shelf life is up to 6 months. Due to the absence of sugar (a natural preservative), it may have a slightly shorter shelf life.
