How to make cherry wine at home

Classic Easy Recipe

To make dry wine, follow this recipe:

  • cherries - 5 kg;
  • sugar - 1 kg;
  • water - 1 l;
  • tannin - 15 g;
  • raisins - 100-120 g;
  • citric acid - 20g

The technological process is as follows:

  1. Remove the pit and mash the flesh with your hands.
  2. Pour the pulp with water, bring to a boil and boil for 10-12 minutes.
  3. Chill and strain.
  4. Add ingredients from the recipe to the resulting juice, close with a water seal and send for fermentation.
  5. When fermentation is complete, decant the supernatant with a tube.
  6. Leave the semi-finished product to infuse at room temperature.
  7. Decante again after 6-7 days. And so on until the top layer is completely lightened.
  8. Pour the wine into bottles and seal tightly.
  9. Store lying down in a cool place.

Wine prepared in this way will be ready in 2-3 months. It does not need a long exposure.

Bone variant

It is possible to make wine with seeds, but only taking into account some nuances. The bone exudes bitterness. Wine made with the pit will have an unpleasant odor and a bitter, astringent taste. When harvesting berries, as a rule, the seeds are removed, and only 100-200 g per 5 kg of fruit are left.

From yellow cherries

The step-by-step way of making wine from yellow fruits does not differ from the classic version. If you use only one variety, you will get a product with a beautiful amber hue.

Cherry version

Assorted wine with cherries is the most common product. However, it is recommended to do it only if the cherry is late ripening, and the cherry is early.
