Then carefully mix the berries in the water so that they all dip into it. The procedure is aimed at making the fruits soften and better absorb the syrup. Mix for 7-10 minutes. Ideally, a wooden spatula is used for this, but this is not essential.
Now put the pot back on the stove and turn on the heat, a little higher than average.Then sugar is added and stirred until it is completely dissolved. Let the syrup boil again and turn on a low fire, on which we cook for 15 minutes. Then the jam is removed from the stove and allowed to cool to room temperature.
It usually takes about 3 hours. And then the jam is again placed on the fire, allowed to boil and simmered for 15 minutes.
Vanillin is poured at the end of cooking - it enhances the cherry flavor and gives a rich, interesting aroma. The finished jam is poured hot into sterilized jars.
